The best products from the orchard
The orchards in the Basque Country –and specially those in Gipuzkoa–offer products that have been always praised for their quality. In Winter, beans play the main role in the different markets and, regarding desserts, the typical products are the ‘mamia’ (sheep milk curd), Errezil apples –roasted or in compote–, walnuts and chestnuts. Moreover, Winter also offers the new vintage of cider and txakoli (white whine).
Spring proposes us the suckling lamb, Idiazabal cheese, anchovies and mackerels, little peas, little broad beans, artichokes, asparaguses, and chards. Summer comes with delicious fish like tuna, anchovies, or sardines, but also exquisite vegetables: peppers, tomatoes, and local bean pods. Autumn is the season for fungi and different local mushrooms –always in demand–, as well as for game meat.
