Three stages
Tolosa has always been a path for travellers coming from Navarre, Castile, and France, allowing an important commercial development. As an example of that, the town now holds a weekly market divided into three different places within town.
Every Saturday, El Tinglado market witnesses the sale of local products, such as the highly esteemed Tolosa bean, the black pudding, the ‘mondejus’ –a variety of white pudding–, and the green chili peppers typical of the neighbouring village of Ibarra.
At the same time, visitors can also buy foreign products –in Euskal Herria Square– and flowers and plants –in Verdura Square.
The town houses different gastronomy fairs throughout the year: Easter –Tolosa Gourmet–, Spring –Tolosa Goxua (sweet things)–, November –Bean Week–, and December –the Chuletón Festival (large T-bone steak).
